1 lb. sweet Italian turkey sausage, cut into 1-inch pieces 1 cup sliced celery 1 large onion, chopped 1 medium green pepper, cut into 2-inch strips 1 medium red pepper, cut into 2-inch strips 3 cloves minced garlic 1 teaspoon dried thyme, crushed, or 1T chopped fresh thyme 1 cup uncooked regular brown rice 1/2 cup uncooked wild rice 3-1/2 cups chicken broth (preferrably home made) 2 tablespoons chopped fresh parsley
Cook sausage in large non-stick skillet until browned. Add celery, onion, peppers, garlic and thyme, and cook until vegetables are tender. Add rice and broth. Heat to a boil. Cover and cook over low heat 45-mins. or until rice is done. Stir in parsley.
