Try this if your in the mood for a different IBS friendly breakfast. It's also great for when company comes.

12 slices 1 inch thick french bread
5 eggs (egg substitute like eggs beaters)
2-1/2 cups soy or rice milk
1 cup light brown sugar divided
1/2 tsp ground nutmeg
1tsp vanilla extract
1 cup chopped pecans (optional)
1/4 cup non diary margarine or what you use melted
2 cups fresh or frozen blueberries ( can sub strawberries or peaches)
Arrange bread in a spray ed 13x9x2 baking dish
In a bowl combine eggs, milk, 3/4 cup brown sugar, vanilla, & nutmeg. Pour over bread. Cover and refrigerate for 8 hours.( best to prepare night before)In the morning remove from refrigerator 30 minutes before baking.Sprinkle pecans (optional) over egg mixture. Combine butter and remaining brown sugar and drizzle over top. Bake uncovered for 25 minutes at 400 degrees. Sprinkle with the choosen fruit and bake a additional 10 minutes longer or until knife inserted near center comes out clean. Makes 6-8 servings.
