Lower Fat Oatmeal Molasses Cookies

Lower Fat Oatmeal Molasses Cookies (Makes 25-30 cookies... I got 31!)
I can't believe these are low fat. They have a great consistency and flavor!
1/4 cup dairy-free margarine, softened 3/4 cup sugar 1/4 cup molasses 2 egg whites or 1/4 cup Egg Beaters 1 teaspoon vanilla extract 1 3/4 cups flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup oats, uncooked 1 teaspoon cinnamon 1/2 teaspoon ground ginger
1. Cream margarine; gradually add sugar, beating at medium speed of an electric mixer until well blended. 2. Add molasses, egg whites and vanilla; beat well. 3. Combine flour and next 5 ingredients in a medium bowl, stirring mixture well. 4. Gradually add flour mixture to creamed mixture, mixing well to combine. 5. Drop dough by level tablespoonfuls, 2 inches apart, onto cookie sheets coated with cooking spray. 6. Bake at 350 for 12-13 minutes or until very lightly browned. 7. Cool slightly on cookie sheets. 8. Remove from cookie sheets and cool completely on wire racks.
