Hi Kim,
As to your cheese problem, you know they do make rice based cheeses. I just haven't used them due to the high fat content in them, but used sparingly they should be fine for you. Your health food store should have them and I've occassionally seen them in a regular old grocery store now and then. If you can't find them ask the store to order them for you.
I miss cheese soooo much but giving it up is a small price to pay for lack of attacks.
