Seafood in Avocado

I found a recipe called Crab and Avocado Duet, used mostly the same ingredients but changed how I put them together. This is very good. I particularly like it because it has no oil and no mayonnaise. This is a light lunch; you can bulk it up with crackers or bread.

Avocado is soluble fiber but it is also high in fat.

Seafood in Avocado

For 2 servings:

Ingredients

1 tablespoon lemon juice
1/2 teaspoon Dijon mustard
1/8 teaspoon salt
Pinch white pepper
about 1 tablespoon chopped chives (used green onion, white and green parts)

1/4 pound cooked seafood (the original recipes calls for lump crabmeat; this is super expensive so I used boiled shrimp, chopped fairly fine, instead; I bet I could use cooked tilapia or any other white fish also)

1 ripe avocado


Directions

In a bowl big enough to hold everything except the avocado, whisk together 1 Tablespoon lemon juice, 1/2 teaspoon Dijon mustard, 1/8 teaspoon salt, pinch of white pepper, and 1 Tablespoon chopped chives/green onion. Add seafood (crabmeat, shrimp, fish) and toss.

Halve the avocado and remove the pit. Place in a bowl or on a plate large enough to catch overflow. Split the seafood mixture between the two avocado halves, piling it in the hole where the pit was.
