Hi - I just keep the pot in the fridge. It keeps really well. It does make a big batch. You might be able to halve the recipe. I haven't tried that but it should work just fine.


Make sure you use a big pot - it boils up high. Use a starchy short grain white rice, like sushi rice. And follow the directions for tempering the egg whites as you add them, so you don't end up with scrambled eggs in your pudding.
