I'd guess it's the soy sauce...

especially if you used a traditional Japanese soy sauce (like Kikkoman) instead of the mushroom.

If you can't find the mushroom soy sauce, try diluting the soy sauce you have with water. Fish sauce will always be salty but I don't think there's as much variation there.

You can keep cooked rice for quite a few days - and the older it is, the better the fried rice will be!
