question about a recipe EFI

I do have a question about page 172, thai fried rice with cilantro and shrimp. Last weekend we made the recipe, almost the same as the book. We only used 6 cloves of garlic instead of 8 and we used other soy sauce as we didn't had mushroom soy sauce. It was very salty. Is that normal or are there different kinda fish and soy sauces which are less salty? We did like it but we would like it more with less salt. We didn't use any salt in the recipe. Thanks in advance.

Oh, and 1 more, how long can you keep cooked rice in the fridge?
