This should be okay - I'd make sure the grains you use are very finely ground. If you can see any flakes of bran in them, that's when you want to be very cautious.

Oats are oats - they are all inherently gluten free, it's just that many grain processing companies process many different grains, so the oats can be cross contaminated by other grains with gluten. If oats are labeled gluten free it just means they are processed in a gluten free facility. The fiber content would be identical to any other oats.
