The cake is fine, it's the whipped cream filling and topping that will get you.

I don't really know of an IBS safe, dairy-free replacement for whipped cream.

You could omit the whipped cream and just use the fruit in the filling. Or you could make a heavier custard filling instead (try the Tahitian Vanilla pudding recipe from Eating for IBS).

Also, if you don't have to go gluten free, making a regular angel food cake might be easier. That's fat free, dairy free, soy free to begin with.
