Stuffed Banana Peppers

Now is the time of year when our pepper plants are producing way more peppers than we know what to do with. I found this recipe for stuffed banana peppers. It was a huge hit with me and my husband. So if you are able to tolerate peppers this is a good recipe to try.

Stuffed Banana Peppers

1 pound hot ground Italian turkey sausage, browned (if you can't do hot, do mild. I have a recipe for making hot Italian sausage from ground turkey. I will post it below)

1/2 cup Parmesan cheese (use soy if you cannot tolerate or omit)
1/2 cup panko bread crumbs
salt and pepper to taste
1/4 C. eggbeater egg whites
olive oil or canola oil to saute
banana peppers, mine made 15 ( hot or mild whichever you prefer)

Directions

Mix sausage, cheese, bread crumbs, salt and pepper, and egg together in a mixing bowl. Cut tops off peppers and take out seeds. Gently stuff sausage mixture into each pepper. Place oil in a hot saute pan and gently place peppers in the pan and cook until each side is browned. You can serve these with marinara sauce.

I made a Mexican rice to go with these and it was wonderful. I will also post that recipe as well. You can make these peppers ahead of time and then just saute them or you could probably freeze them also. I haven't tried that yet. Here's the turkey sausage recipe...

Turkey Sausage

1 lb ground turkey
3 tsp. minced onion
1/4 tsp. salt
1/2 tsp. oregano
1/2 tsp. sage
1/2 tsp. thyme
1/2 tsp. black pepper
1 1/2 tsp. fennel seed
1/4 tsp. cumin
1/4 tsp. cayenne pepper
2 tsp. minced garlic
1/4 tsp. nutmeg
1/4 tsp. allspice

In a large bowl mix all the ingredients. Chill the mixture for at least 1 hour or overnight to let the flavors absorb the meat.

You can use this recipe for breakfast sausage also.
