Jenny's Chocolate Chocolate Chip Ice Cream!

Here's the recipe for my daughter's wonderfully delicious ice cream. I'm SO blessed to have kids who like to cook!! My son experiments all the time with new GF breads, and he's helped me try out so many of the recipes from all of you on this site!
Jenny's Choc. Choc. Chip Ice Cream
1/3 c. granulated sugar
1 T. cornstarch
2 1/3 c. vanilla soy milk
2 organic egg whites, beaten lightly
2 T. cocoa powder (we liked the taste with 2 T., but you could adjust this to your taste after you've tried it once)
"Enjoy Life" mini-choc. chips (or semi-sweet chips of your choice) These worked great for me w/ no dairy, egg, or gluten.

Whisk together sugar and cornstarch in a large saucepan. Whisk in vanilla soy milk. Bring this to a boil over a med. heat, whisking frequently for 1 minute. Remove from heat. Whisk several large spoonfuls of hot milk mixture into egg whites , then whisk egg mixture back into saucepan of hot milk. Bring this mixture to a boil over med. heat, whisking very frequently to avoid scorching. Once it has reached a boil you can remove it from the heat. Add 2 T. cocoa powder at this point, whisking to mix it in thoroughly. Pour into a bowl and refrigerate until it's cold. Freeze mixture in ice cream maker according to directions. We waited to add in the mini-choc. chips until the ice cream was nearly finished.

Everyone has different ice cream machines, so adjust to how yours operates. We have a little one made by Cuisinart. It's actually called a frozen yogurt-ice cream and sorbet maker. I really love it because it is SO FAST. You store the main part of it in the freezer all the time so that it's cold and ready to go when you want to make ice cream. You just put the 3 pieces together, pour in your mix, and turn it on. It's ready in about 30 minutes!! It makes the ice cream very much like a soft serve consistency, but you can then transfer it to a freezer container and freeze it for an hour or longer to have more of a hard ice cream. We love it both ways. YEA...my little boy can have really yummy chocolate ice cream again!!! Of course, his mama eats it right along side him.
Hope you'll have a chance to try this. BTW: I think I'll add a touch of mint next time- I LOVE chocolate and mint!
