gluten free pizza crust mix

For those of you who have to avoid gluten, I thought I'd post about a pizza crust mix that's very easy to make and follows our IBS guidelines. It's very full of flavor (Italian seasonings right in the mix) and so it really doesn't take a lot of toppings to make it taste great. It's made by Namaste Foods, and should be easy to find in health food stores. It makes 2-14" crusts. Ingredients are: brown rice flour, tapioca flour, arrowroot flour, xanthan gum, granulated garlic, cream of tartar, salt, baking soda, Italian seasoning, granulated, onion, ascorbic acid. You just add 1 tsp. oil and 1 1/2 c. water! The directions on the bag are clear and easy, but odd...which is very typical for GF baking! It doesn't need to rise, so it's ready to go in the oven in just minutes, cooks for 20 min with no toppings, then 10-15 with toppings.
My whole family liked it, which is always a good test for me since I often wonder if my memory of "good, non-GF food" isn't accurate after 10 years !! I just topped mine with a jarred pizza sauce from Wal-Mart... believe it or not, it's actually very tasty and completely safe! I added chopped up grilled chicken left over from the day before and some shredded soy mozzarella cheese. I'm still not eating very "adventuresome" foods since I'm working my way out of my BIG CRASH of last summer (and only just found this site recently).
Hope this helps make a somewhat quick pizza for those who can't do Heather's crust with gluten.
BTW- I also make a FANTASTIC homemade GF pizza crust with yeast in it that does need to rise (my family prefers it to any take out or restaurant crusts), but I haven't had a chance to try it with the few IBS modifications that it needs. I don't see any reason why it won't convert, but I don't want to post it until I try it. It's more of a regular crust (no seasoning), but very healthy and great texture and taste.
It's so great to be part of this message board community and get advice and tips from others who know what IBS is really like. I say "thank you, Heather!" many times a day when I drink my tea or fix a mango-banana shake and feel OKAY!! It's not gone, by any means, but I understand it now and feel much more in control.
