Italian Chicken...YUM!

I've made this chicken for years and it's always moist and delicious (and super easy!) The only changes I have to make to have it "IBS Friendly" are to use soy substitutes for the mozzarella cheese and Parmesan cheese (although the Parm could easily just be left out). I've always served it over white rice anyway- I love how the tomato juice and seasonings flow down into the rice on your plate...it's all so flavorable. Enjoy!
6 boneless, skinless chicken breast fillets
1/2 c. onion, chopped
2 tsp. minced fresh garlic
1 tsp. dried basil leaves
1/2 tsp. dried oregano leaves
1/4- 1/2 tsp. salt
1/4- 1/2 tsp. pepper
2 (14 1/2 oz)cans diced tomatoes
1c. shredded mozzarella cheese (sub a non-dairy cheese)
1/4 c. grated Parmesan cheese (again...use a sub)
Cooked white rice

Heat oven to 325. Spray 9x13 pan with Pam. Layer ingredients in pan in order given (chicken first, then onion, next garlic, etc) Bake uncovered for 30-45 minutes, or until chicken is no longer pink inside. Serve over rice (spoon extra tomato juices over top! yum!) Makes 6 servings
