Would you sub it equally?
I.E.: 1/2 cup of pumpkin pureee for 1/2 cup butter or for 1/2 cup oil?
Not sure what fruits would work best for you for the fructose issue, but in general any fruit pureee will work as a sub for applesauce in baking.
