I had been craving waffles and can't eat the frozen ones you buy.I found this great waffle recipe that I altered so I could eat it. It's great you can make a bunch ahead of time and freeze them and then just pop them in the toaster oven when you want one for a quick breakfast or snack. I thought I would share that recipe.

Ingredients:
2 C. unbleached all purpose flour
2 tsp. baking powder
2 tbsp. white sugar
1 tsp. salt
2 C. soy milk
1/2 C. egg beaters
2 tbsp. canola oil

Directions:
1. In a large bowl, stir flour, baking powder, sugar and salt. Add milk, eggs, and oil; mix well.

2. Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown.

For my waffle maker it's about 1/2 cup of mix per waffle for 8-10 minutes.
