I tried Heather's Maple-Glazed Salmon (p180) served it with french bread and a compote of sweet potato, pear and apple. It was delicious. The cold glazed salmon was even better for lunch the day after.
Also tried Orange-glazed chicken breasts (p206). I substituted diced nectarines for the carrots and mushrooms. Served this dish with mashed russet potatoes using chicken broth and a small amount of goat yogurt instead of butter and cream.
