They're ice cream sandwiches, but you don't have to make the sandwich part. You could adapt this recipe to any other flavor. The key to the rich texture is that you cook the soy/rice milk with a bit of cornstarch to just slightly thicken it. Once frozen, this will give you the "mouth feel" of a full fat ice cream.
