Substitutions

I have been on a quest to include more veggies in my diet. I found this recipe for muffins and wanted to do some substitutions to make it better for my tummy. I would love some help from the experts!

Garden Harvest Muffins
1 cup flour
3/4 cup sugar
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1/2 cup apple
1/2 cup carrot
1/2 cup zucchini
1/4 cup of waluts
1/4 cup canola oil
1/4 cut buttermilk
2 large eggs

So I'll obviously do white flour, and soy milk instead of buttermilk- also egg whites instead of eggs. I'm wondering if I can substitute pumpkin for all or some of the oil? I would love to do all but I don't know if that would work. I will most likely forget about the walnuts or do almonds instead since I don't love walnuts and neither does my stomach. Any other ideas of what I should or should not do?
