So I bought a couple packages--and these were the regular fat, regular sugar kind, made with regular milk--and tried making one ahead of time, as an experiment. No luck! The stuff wouldn't thicken! So maybe it's a matter of luck? :P Sorry I can't be of more help. On the other hand, if you want a low-sugar, IBS-safe homemade pudding recipe, let me know and I'll post it.
