My favorite at-home lunch

Hi all,

I've been enjoying the pants off this simple lunch almost every day for the last two weeks. Thought I'd share.

On the stovetop, combine 3/4 cup cooked white rice with 1/2 cup tomato juice and 1/4 cup black beans. Toss in a few sliced grape tomatoes. Season with cumin, chili powder and red pepper flakes. Let it reduce down a bit and serve with an egg white or two. If you want to get really fancy, top with chopped fresh cilantro and diced avocado. I love making this after I've gone for a run.

(Instead of the tomato juice/grape tomato combo, you could just add 1/2 cup canned diced tomato.)
