My family always did a ham for Easter. Perhaps you could make a turkey ham, or buy one of those lean pre-cooked boneless hams (which generally have far less fat than the raw, bone-in hams).

For sides you could do sweet potatoes or yams, and/or mashed potatoes made with light dairy-free margarine and soy/rice/almond milk, a Zuchinni Casserole (this has gotten rave reviews whenever I've made it), and maybe a side of IF vegetable like brocolli or brussels sprouts.
