If you soak the potatoes in water with about a teaspoon of sugar, the sugar will draw out some of the water in the potatoes so the fries get really crispy in the oven rather than steam and get mushy. A great trick I learned from my Weight watchers cookbook. It works great. My oven fries even compare in taste to the fried ones without all the fat, at least to me.
