How about turkey rolled inside a pita, maybe with some thinly sliced veggies and some mustard or non-fat mayo? Heather's tuna melt recipe is absolutely fantastic, but that's more of a meal than a snack. Smoked salmon on a bagel is also a tasty treat, but you might have to have grown up in a household where everyone eats smoked fish for that to be acceptable to a kid.
