I'm glad you liked it - and glad it's such a forgiving recipe. I think white wine for sherry is better than cooking wine, but the sherry really does taste nice in it. I think of bok choy as a kind of Chinese cabbage, but it looks like a cross between celery and romaine lettuce. It has a wonderful flavor in this dish, but I'm never sure what to do with all the rest of the head, so I pretty much always used celery.
