Listen, Girl, I have an AWESOME recipe for you to fix Mom for dinner! It's a WW recipe called "Confetti Chicken," full of fresh veggies (well cooked) and LOTS of flavor! OMG! You should make that for her, then for dessert, whip out that awesome WW chocolate layer cake -- just to blow her mind -- and then, after she's eaten and enjoyed herself, THEN tell her it was all WW and that she'd not only eaten healthy stuff, but it was all low-fat and "safe"!
If you want my recipe for Confetti Chicken, just scream. In fact, I might post it here.
BTW, don't put the confectioner's sugar on top of the cake; it kinda "melts" into the "jelly" on top and looks awful. Besides, you don't need it. Oh, and I highly recommend the raspberry "jelly" because it goes so well with chocolate, making it even richer. I can't imagine apricot on there.
