Source: Weight Watchers. I got this from their cookbook and made it today. It's absolutely INCREDIBLE, very light, rises beautifully, and has a fabulous rich flavor. This cake is FAR better than any of the Weight Watchers "ready-made" desserts. Very satisfying too.
Note: I substituted plain soy milk for the buttermilk, adding a little vinegar to the soy milk to "sour" it. Also, I substituted raspberry spreadable fruit instead of the apricot.
