Tonight I made this chicken and used the 5 pound "roaster" and it took just under 2 hours and was perfectly done. I cut off a very large piece of foil, folded it in half so the fold was the bottom and then folded over the sides several times. I stuck in the chicken (which had onions, Simon and Garfunkel herbs and S&P) into the opening of the foil bag. (I also threw the neck in there as well) I poured about a cup of chicken broth all over it and sealed the bag well and baked at 400. It was so nice and juicy and flavorful. then I took the drippings which were not fatty and added cornstarch and water and heated them up until thickened. The extra gravy was poured over the leftover chicken and the leftover potatoes, snap peas and mushrooms so as to make potpie tomorrow. Potpie leftovers
