I probably should have posted this earlier for southern people. I am making mine today. This is my favorite jam recipe and I have used it for 4 years now. It is vegan since it has no gelatin or anything like that.

Strawberry jam:
2 quarts (8c) crushed ripe strawberries (use potato masher)
6c. sugar

Heat in large pot. Simmer/boil for 40 minutes, skimming the foam on the top every few minutes and stirring very often. Put in sterilized jars (boiled 10 min) and process for 5 min. Half pint jars, leave 1/4 in headspace. Or just use fresh or freeze. No need to can.
I still have 4 jars from last year left! But I eat it pretty often. This jam is runnier than most but fresher tasting and can also be used for cake/ice cream/waffle topping or stir into yogurt and that kind of thing. It is thicker when cold.
