Hi all,
My boss went to a cooking class last night where they were making Chinese food. She said all the food was amazing, and that it was actually a lot easier than she thought. She brought the recipes in, and I took copies of them. Not all are IBS safe, so I thought I would just post a couple that seemed alright. Let me know if anything on there is a "no-no" so I can modify it!!

1 pkg of fresh Shanghai noodles or 3 squares of Diamond brand noodle, cooked Are these noodles safe? I don't know if they are made of egg or not...
-Chicken meat sliced and marinated in light soy sauce, corn starch and pepper
-4 handfulls of veggies, chopped (carrots, cabbage, peppers, bean sprouts.. you could do anything, though)
-2 T crushed, chopped fresh garlic
-3 T crushed, chopped shallots or onion
-1/2 cup chopped Chinese celery
-1/4 cup light soy sauce
-Pinch of salt/pepper
-1 cup good chicken stock
-1/3 cup canola oil
Heat oil and stir fry meat until just done, then put aside. Keep juices if there are any (I think that's what it says, this is hard to read!). Fry garlic, onion and celery. When soft follow with half the amount of veggies. Sit well. Fold in the noddles and the juice from meat and season with the rest of the ingredients. Then add the rest of the veggies, the meat and the stock. Stir well, serve right away.
Fried Cod Fish with Spicy Black Bean Sauce
1 pc Whole cod (2-3 lbs), cleaned
1/3 cup black bean sauce
1 cup diced onion (large pieces)
2 T crushed garlic
2 T fine julienne of ginger
2 T crushed and choppes hot peppers
1/2 cup of chopped fresh tomatoes
1/2 cup of short julienne of red and green peppers and leeks
1/4 cup of light soy sauce
1/2 cup mixture cornstarch and all purpose flour
salt and pepper, cilantro and green onion for garnish
Oil for pan frying.
Season fish with salt, pepper and flour mixture. Heat oil and fry until crispy on both sides. Keep aside on serving platter. Reduce oil and sauce onion, garlic, ginger, and hot peppers. Follow with the rest of the ingredients, stil fry fast and pour on top of the fish. Garnish and Serve.
Chicken and Shrimp Fried Rice
-4 cups rice, cooked and cooled
-1/2 lb baby shrimp, cleaned and marinated in tapioca starch and light soy sauce. I have never heard of tapioca starch... it just strikes me as not safe, though...
-1/2 lb chicken meat sliced small and thin, marinated in the same as the shrimp
-4 eggs, scrambled. Can we just use scrambled egg whites?
-1.5 cups of frozen peas and carrots, thawed
-1/2 cup finely chopped onion
-2 T fresh chopped garlic
-1/4 cup of green onion, chopped
-Salt and Pepper to taste
-3 T finely chopped Chinese celery for garnish
-1/2 cup I'd use less canola oil
Heat oil, stir fry chicken and shrimp, and keep aside. Fry onion and garlic and rice, fry well. Add peas and carrots. Season to taste, add the rest, garnish and serve.
I definitely want to try this one, I love fried rice but haven't risked it since my tummy got bad.
Sweet and Sour Pork and Root Vegetables
-1 lb pork thick slices Obviously, I wouldn't eat the pork. I'd try replacing it with chicken.
-1.5 cups of cubed veggies (carrots, celery and daikon (white cabbage))
-1/2 cup onion, diced
-2 T crushed and chopped garlic
-2 T ground Ginger juice (to marinade meat)
-Pinch salt and pepper
-1 cup sweet and sour sauce (or plum sauce - see below for sweet and sour sauce below)
-1/2 cup flour and corn starch mixed
-Oil
-Garnish with pineapple or cherry tomatoes.
Season meat with salt, pepper, ginger juice, marinate the meat, then put flour on it. Now, the recipe says to deep fry it.. but I figure you can just cook it in a frying pan.
Saute the rest and toss in the meat. Add the saucce.
Sweet and Sour Sauce
1/2 cup white vinegar
1/2 cup white sugar
1/2 cup boiling water
4 T light soy sauce
2 T tomato paste
3 T cornstarch
a pink of black pepper
Mix all ingredients well, and bring to boil and serve
Chicken, cash and asparagus stir fry
-2 lb chicken meat slices (marinated with light and dark soy sauce and corn starch)
-1 bunch asparagus cut 1" cleaned and crushed
-1 cup roasted cashew nuts
-1 small onion, diced into large peices
-2 T garlic, rougly chopped
1/3 cup light soy sauce
1/3 cup I'd use less canola oil
Heat oil in pan, stir fry chicken until just done. Keep aside, saute onion and garlic. When fragrant add asparagus and season to taste. Add chicken, mix well. Garnish with cashew nuts and serve.
Okay, there we go!
Dunno if they are all totally safe - I left out the ones that I KNOW aren't safe, but thought these might be alright.. or at least able to modify.
