I made a few changes to suit me. (very sweet tooth!) I substituted the bread flour for the same amount of regular white organic flour. I used 2 egg whites, and added 1/2 cup of sugar. I used plain soy milk as I didn't have any vanilla soy so I added 1 tsp vanilla. I also used applesce rather than pureed prunes (can't get them here) or oil. The best thing was they were so fast to prepare, fast to cook and there wasn't much washing up. (3 very important things I say!) Thanks for a new recipe to add to the file. Kerrie P.S This recipe has also given me ideas for other muffins.
