That sounds really yummy. In addition to being made with dark meat, though, some turkey sausage is packed in pork lining. (I'm not familiar with the brand you mentioned -- I'm just speaking in general.) Since you are crumbling it anyway it's easy enough to just take the skin off, which is what I do in recipes like this. But, just wanted to give people the heads-up to check the ingredients for this.
