another tofu recipe

Here is another good tofu recipe. The first version calls for peas (leave them out if they're a problem for you) and serves 4. The second version I scaled down to serve just 2 and calls for spinach as my ex-significant other didn't like peas. Take your pick.
Creamy Tofu with Pasta
1 onion, chopped 2 teaspoons extra virgin olive oil 1 clove garlic, minced 1 tablespoon flour 1 1/2 cups plain soy milk 1 tablespoon parsley, finely chopped 1/4 teaspoon pepper 1/4 teaspoon thyme 1 teaspoon salt Pinch cayenne (optional) 1/2 pound firm tofu, crumbled 1 cup green peas
12 ounces pasta, cooked according to directions
Saute onion in oil until golden, then add garlic. Cover and cook for about a minute. Stir in flour and cook briefly, then whisk in soy milk and cook until slightly thickened. Stir in remaining ingredients (except pasta) and heat thoroughly. Serve over pasta or rice.
Reminiscent of creamed chicken favorites, this dish is particularly wonderful with spinach fettuccine. Serves 4. (For our family, a doubled recipe serves 6.) --http://eserver.org/recipes/creamy-tofu-with-pasta.txt *If doubling, use 3 tablespoons flour, 1 teaspoon salt, and 1 1/2 cups peas.
