stuffed artichokes

I better post this before I forget how I made it.
serves 2
2 artichokes, stems trimmed and bottom leaves pulled off
2 slices dry italian bread crumbs
1 portobello cap, finely chopped
little bit of chicken broth
salt and pepper
parsley
lemon

You can cut the top half off the choke before or after steaming- put 1-2 inches of water in a pot and put in artichoke rubbed with lemon. Steam for 10-15 minutes or until quite piercable. Remove and cool slightly. Cut off top half and pare out the fuzzy inside. Start with a spoon and then use a paring knife to get all the fuzzy stuff out. Mix stuffing ingredients and add just enough broth to make it wettish but not dripping. Stuff the 'chokes, spread leaves so all stuffing fits. Bake for 20 minutes and 350. or so.
