1/2 cup margarine 1 cup granulated sugar 4 egg whites 1 cup plain soy milk 1 tsp vanilla extract 1/2 tsp almond extract
2 1/8 cups all purpose flour 2 tsp baking powder 1/2 tsp salt 3/4 cup glazed fruit 3/4 cup raisins or currants 1/2 cup finely chopped almonds
Cream margarine and sugar together. Beat in egg whites one at a time until smooth. Stir in milk, vanilla and almond flavouring.
In a large bowl, combine flour, baking powder and salt. Stir in fruit, raisins and nuts. Add all at once to first bowl. Stir just to moisten. Turn into a greased 9X5X3 inch pan. Bake one hour at 350 degrees or until it tests done. Let stand 10 minutes. Remove from pan and cool and wrap.
