My ex's mom used to make her mashed potatoes like this... and honestly, they are the best mashed potatoes in the universe. YUM. I think that if you eat them with a stuffing made with broth and no margarine, steamed veggies, and white-meat turkey, you'd pretty much balance out the fat content just fine.
