I served it with roast potatoes but there is so much sauce, that is leeks and tomatoes, that it might be better over rice, pasta, couscous or something like that. I used 1 can diced tomatoes and a little fresh dill with ample salt and pepper. The tartness of the tomato and leek really worked well with the richness of the salmon. Definitely a winner and I would bet it tastes better than the Rachael Ray one with cod and fennel.
