I am eating this right now! Not too formal in my house. You should have an oven probing thermometer if possible that you can stick in the chicken and monitor the temp outside the oven.
1 whole chicken- remove skin and fat chunks and prick all over with knife
1 lemon cut in half
few garlic cloves
herbs like rosemary and sage in sprigs
chicken stock -about a cup
heavy duty foil or oven bag

Heat oven to 400 or so. Put the skinned chicken on the foil and make a boat that will hold the stock. Stick the probe in the thigh. Add garlic, herbs and lemon to cavity. Don't need to tie legs. Pour stock over chicken and seal the foil up. It has to cook about 1 1/2 hours which surprised me. It is done when it is 180. But it won't hurt it so much to overbake. It will be very juicy! IBSers eat the breast and rest of fam eat the rest!
