3 cups all-purpose flour 2 cups sugar 1 tsp baking soda 1 tsp salt 1 tsp ground nutmeg 1/2 tsp ground cinnamon 1/4 tsp baking powder 3/4 cup egg beaters (or 6 egg whites) 3/4 cup applesauce 1/4 cup canola oil 1 Tbsp grated orange peel 2 tsp vanilla extract 2 cups shredded zucchini 1 cup (6oz) carob chips 1 cup chopped walnuts, optional
In a large bowl, combine the first seven ingredients. In another bowl, combine egg beaters (or egg whites), applesauce, oil, orange peel and vanilla. Stir into dry ingredients just until moistened. Fold in zucchini, nuts and carob chips. Divide batter between two 9x5x3 loaf pans sprayed with cooking spray. Bake at 350 for 55-60 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
