How long before a trigger foods attacks you?

I know this might sound like a stupid question but how can you tell when you have eaten a trigger food for your system, how long does it take before the attack hits you? The reason I'm asking this is because I have been feeling about the same for the last 2 weeks or so and that is, mild constipation, bloating and gas almost all the time with a few breaks for a couple of hours now and then during the day. No problems while I sleep. I have not had any cramps or diarrhea for about 3 weeks ago when this whole IBS started. I have been falling your guide lines on what foods to eat, how to eat them, and what to avoid. I have been drinking herbal teas, like fennel, ginger, slippery elm, peppermint and started the Acacia fiber 2 days ago. My condition seems to be in a rut now, not getting much better and not getting any worse and I'm not sure why. But say I ate a trigger food in the morning for breakfast like real eggs, bacon and milk etc. when would I feel the negative effect of this if this is a trigger food for me? By the way I have not bee officially diagnosed with IBS, I have doctors appointment in 2 weeks. Your books and teas have been truly helpful. I hope this all made sense.
