Hi Andrew - you could take the pep cap last thing at night before bed. That works well to head off morning problems, and usually that's late enough that you'd have an empty stomach after dinner.

You can take the probiotic and pep cap together - they won't interact at all. But make sure you don't have to drink a lot of water for that - the enteric coating on the caps is stomach acid resistant but water soluble.

Peppermint - and a lot of other herbs and spices, actually - is inherently anti bacterial, anti fungal, anti lots of bad stuff. But it won't hurt probiotics or your natural good gut bacteria.

Interestingly, herbs and spices traditionally have been used not just for their digestive aid properties, but because they naturally help retard food spoilage. Especially critical in the days before refrigeration or modern processing/pasteurization, etc.
