Need help breaking the cycle - questions about oats and potatoes :)

Hello,
I'm very new to the diet and have realised I need to 'break the cycle' starting ASAP!

Do I need to start with instant oatmeal tomorrow morning or is normal rolled oats cooked into oatmeal OK?

Also, I have just boiled a lot of baby new potatoes... is it OK to eat them without the skin or do I need to stick to baked potatoes as mentioned by Heather in the 'what to eat when you can't eat anything' food list?

And finally I have gluten free pasta made from maize and white rice flour. Would that be OK whilst breaking the cycle or should I stick to the 100% durum wheat white pasta?

Thanks in advance and sorry if these questions have already been asnwered!
I did try and search but then decided it was better to be safe than sorry as I've been living through a major IBS attack without realising what has been going on for too long to admit to!

P.S. is chicken breast / white fish / tofu out of the question for the next few days?
