Organic or not organic - no difference

It doesn't make any difference if it is organic or not organic. Wheat bread contains a carbohydrate called a fructan - a high FODMAP - proven to be a potential IBS trigger. Kate ate Scarlata - a dietitian with IBS - has written an excellent overview article on the FODMAP diet
