The Bouchard's still has some bran part on when grinding per company @ 3g fiber/100 cal (more than I thought). Didn't know about the bran?? Just wanted to make sure the hull wasn't still on. BTW, Pocono's still leaves "some" of the "hull" in their flour, which is the same fiber content, which I think is what Bouchard's is possibly doing, and yet Bouchard's can still be white, because they said it is a whiter variety of buckwheat. THOUGH, Bob's Red Mill says their "whole" grain raw groat form is only 1g fiber/160 cal. So try grinding that for flour: http://www.bobsredmill.com/organic-raw-buckwheat-groats.html?&cat=6 Or, Pocono's cream of buckwheat/i.e. grits mentioned @ top of quote which is easiest on your blender, and at 1/2C at a time with lid on until opening after dust settles..but not their's or Bouchard's already ground flour, easier on IBS. Only exception, is if you don't mind higher fiber forms of Buckwheat flour in small amounts with the white wheat in recipes.
