I still have NO problems with the white spelt bread I've made leavened 12 hrs. or more using probiotic liquid, to break some of it down before eating. I agree with this preparation. Tried a no added yeast in the ingredients white wheat sourdough too from the store, but feel better after eating white spelt sourdough. I used Vita Spelt's unbleached spelt flour ("NOT" the whole grain one).
