When it comes to cheese knowledge, that's a very broad question that someone could write a thesis on. If you go to a cheese party, around 30 different cheeses will be presented, explaining where it came from and how it was made. Or you could go to place with a cheese counter and those people should be very knowledgeable about what they sell. If you're just looking for something different than the swiss, there are literally hundreds of cheeses out there to try. Trial and error. Eat the ones you can and stay away from the ones that bother you.
