too much of any kind of fat can set off IBS. Coconut is highly saturated, so may not be a great bet, and you will taste it in many foods.

Olive oil is fine - so is safflower. In general, the most monounsaturated option you can find is best. That's why I specify canola, which is also tasteless, so great for baking.
