I think what you're doing to make "fries" sounds safe - and yummy. Like hohoyumyum I've never had a problem with regular ketchup.

There are also a number of recipes in the Recipe Index for various types of fries. I make a variation of Crispy Potato Wedges. I peel the potatoes, toss the wedges with a little olive oil, and use garlic salt for flavoring.

As for baked potatoes, I use a little Smart Balance Light on mine.
