The trick is to mix it with something stronger, so the fennel becomes a pleasant side note, rather than the main event. Here's an old thread that talks about some teas to mix it with. I'm not sure if I talk about it in that thread, but I've found that one peppermint tea bag (I use Lipton) brewed with 1/2 teaspoon of Heather's fennel seeds for 5 minutes is quite pleasant if I add a little sugar. Someone - I think it's HanSolo - says she just holds her nose and drinks it and if you truly want to give it a try for gas and bloating that might be the way to go: brew it strong, think of it as medicine, and down the hatch. You could also cook with it, but the only recipe I have that uses it is my spaghetti sauce - I throw in a generous teaspoon or so.
