No problem, happy to answer questions. My "chicken" is Veat. It's extremely tasty and very low in calories/fat.
And tortilla soup was 1 diced onion, 2 diced cloves of garlic, and three seeded jalepenos sauteed in a bit of olive oil. Add to that 2 peeled and seeded chopped tomatoes, and one cup of vegetable broth. I also added 1 chopped yellow pepper. Simmer that for 10 minutes with 1/2 teaspoon dried oregano. Once that is simmered, blend in blender till pureed. Add to another 3 cups of vegetable stock and simmer for 20 min. Serve with 1 crunched up tortilla chip, fresh cilantro, and a slice of avocado, should you choose.
It was tasty, but since I used no sodium vegetable stock (though very high quality), I think it could have used some salt.
